New Soup Products for Making Soy-free Soy Sauce

 

This month, I have to mention a few products: Kitchen Basics, which I was very excited to find at Waldbaums, has a full line of products that are completely soy-free, tree-nut-free and peanut-free; there is even a promise made on the back of the product that there are no allergens or anything made on equipment, no GMOs, NOTHING! Just pure, delicious soup stock. Get it! Let's help this company expand! As many of you already know, most, if not all soups contain some type of soy protein, soy lecithin, soy derivative or GMOs in the form of 'natural flavors.' Well, no need to worry, now that we have Kitchen Basics Chicken Stock, Kitchen Basics Beef Stock and Kitchen Basics Turkey Stock keeping us safe!!

I use the Beef Stock for making my own personal variation of Soy-Free Soy Sauce. 

Here is the recipe:
 
Ingredients:
2 Tablespoons of olive oil
4 teaspoons balsamic vinegar
2 teaspoons dark molasses
1 teaspoon minced ginger
1 pinch white pepper
dash of oregano
1/2 teaspoon black pepper
2 cloves of fresh garlic, minced
1 1/2 cups Kitchen Basics Beef Stock
salt to taste

In a saucepan, sautee the minced garlic and ginger in olive oil on low-medium heat until lightly browned. Add the beef stock, balsamic vinegar, molasses, white pepper, black pepper, oregano and salt. Boil gently for about 15 minutes until liquid is reduced to about 1 cup.
